Fairtrade Banana Ice Cream

To celebrate Fairtrade Fortnight (24th Feb – 9th March) we have put together a series of simple and scrumptious recipes that all the family can get involved in.

Today's offering is a delicious Fairtrade Banana Ice Cream dish.

This straightforward recipe is detailed below and we would love to hear your feedback at the foot of this article.

• Preparation Time:  Around 4 – 5 hours
• Serves:  8


• 3 limes
• 2 tbsp Co-op Fairtrade dark brown sugar
• 300ml double cream
• 300ml low-fat natural yogurt
• 5 ripe Co-op Fairtrade bananas
• 2 tbsp unsweetened desiccated coconut (optional)


Finely grate the zest from the limes and set aside.

Juice 2 limes and stir juice into sugar until dissolved.  Whip the cream until it holds its shape.

Add in yogurt.  Peel 4 of the bananas and mash until you have a purée.

Fold the zest of 2 of the limes, juice, sugar and banana purée into the cream.

Spoon into a lidded container and freeze for 45 minutes, then stir the mixture, refreeze for 45 minutes, stir again and refreeze.

Continue this process for at least 4 hours. To serve, top with slices of banana, lime zest and, if using, the coconut (toasted).
