Fairtrade Strawberry and Banana Pancake Cones

Bored of the usual lemon and sugar topping on your pancakes?

This Fairtrade alternative is not only delicious, but it will also give you two of your five a day.  It really is a win win situation!

  • Preparation Time:  Around 15 minutes
  • Cooking Time: 5 minutes
  • Serves:  4

Ingredients

  • 1 Fairtrade banana
  • 100g (3½oz) strawberries ‘look out for British when in season’
  • 30ml (2 tbsp) low fat natural yogurt and the grated rind of 1 orange (Fairtrade of course if in season!) mixed together

Method

Sift the flour in to a mixing bowl. Make a well in the centre and add the eggs.

Gradually draw in the flour with a wooden spoon or whisk, adding a little of the milk mixture at a time, beating until you have a smooth batter. Pour into a jug.

Preheat a frying pan with a little oil in it.  Spoon the batter mix into the pan.

Cook for a few minutes until golden, flip overand cook the other side.

Fold to form a cone shape. Fill with slices of strawberries and banana, top with the yogurt and orange, mix and serve.
