Helen’s Stuffed Chicken

I’m not very imaginative when it comes to chicken dishes.  If I’m not doing a chicken roast, I tend to be chucking the chicken in fajitas or a stir fry. 

So, I was chuffed when I stumbled across this testy recipe for stuffed chicken, which is easy to prepare and isn’t too calorific either.

  • Preparation Time:  Around 10 minutes
  • Cooking Time: 30 minutes
  • Serves:  4


  • 100g spinach
  • 4 skinless The Co-operative chicken breasts
  • 125g The Co-operative Italian mozzarella cheese, thinly sliced
  • 2 slices The Co-operative honey roast ham, diced


Preheat the oven to 200°C/fan 180°C/Gas 6. Wash the spinach in a colander and then pour over boiling water until the spinach starts to wilt. Rinse with cold water, squeeze out the excess water and chop finely.

Place the chicken breasts on a large baking tray. Cut each breast down the middle and fill with the spinach, mozzarella and ham. Close up the breasts and secure with cocktail sticks.

Season with freshly ground black pepper and bake in the oven for 30 minutes or until the chicken juices run clear. Serve with mashed potatoes and vegetables.
