Ingredients

  • 1 tub of The Co-operative Irresistible Moroccan topped houmous
  • 8 The Co-operative Irresistible Summer Kiss™ tomatoes
  • 12 The Co-operative Irresistible green olives in garlic
  • 8 The Co-operative Irresistible Stuffed Peppadew™ peppers
  • 6 slices of The Co-operative Irresistible Parma ham
  • 140g The Co-operative Irresistible manchego cheese cut into cubes
  • 1tsp The Co-operative Irresistible chilli infused olive oil
  • 8 slices of The Co-operative Irresistible ciabatta bread
  • 2tsp pesto
  • 1tbsp The Co-operative Irresistible basil infused olive oil
  • 1tsp The Co-operative Irresistible balsamic vinegar
  • Fresh rocket to garnish

Method

  1. This is a great way for everyone to tuck in and share some great food. For maximum impact you will need a large board or plate.
  2. First thing to do is pop the manchego cheese into a small bowl and mix with the chilli oil and place onto the board. Get another small bowl and add the basil infused olive oil and pour the balsamic vinegar and place on the board. Next toast the slices of ciabatta on both sides then spread a little pesto on each slice and place on the board.
  3. Pop the houmous into a small bowl and place on the board. Next arrange the Parma ham, Summer Kiss™ tomatoes, green olives in garlic and the Stuffed Peppadew™ peppers. Finally garnish with some fresh rocket leaves and take to the table and your guests will be mightily impressed.
  4. This recipe has one or more red traffic lights.  It's fine to eat occasionally or as a treat.
