Chilli, Sweetcorn and Tuna Lunchbox Pasta

Ingredients
- 1 corn on the cob
- 1 red chilli, de-seeded and finely chopped
- ½ green pepper, finely chopped
- 1 celery stick, finely sliced
- 1 tin of tuna, drained
- 2 handfuls of fresh rocket
- 175g pasta, penne, fusilli
- Drizzle of extra virgin olive oil
- Squeeze of lemon
- Fresh milled pepper and a little salt
Method
- Cook the corn on the cob for 5 minutes then drain and refresh under cold water.
- Cut the kernels of the corn and place into a bowl. Mix with the chopped pepper, celery and chilli. Drizzle over a little oil and a squeeze of lemon.
- Cook the pasta until just tender, drain and leave to cool.
- Once cool and still a little warm mix the pasta into the vegetables. Now flake over the tuna and season to taste. Pop into a lunch box and keep refrigerated. Serve with a handful of fresh rocket.
