Fairtrade Strawberry and Banana Pancake Cones

Ingredients
- 1 Fairtrade banana
- 100g (3½oz) strawberries ‘look out for British when in season’
- 30ml (2 tbsp) low fat natural yogurt and the grated rind of 1 orange (Fairtrade of course if inseason!) mixed together
Method
- Sift the flour in to a mixing bowl. Make a well in the centre and add the eggs.
- Gradually draw in the flour with a wooden spoon or whisk, adding a little of the milk mixture at a time, beating until you have a smooth batter. Pour into a jug.
- Preheat a frying pan with a little oil in it.
- Spoon the batter mix into the pan.
- Cook for a few minutes until golden, flip over and cook the other side.
- Fold to form a cone shape. Fill with slices of strawberries and banana, top with the yogurt and orange mix and serve.
