Mulled Wine

Ingredients
- 1 Fairtrade lemon
- 1 Fairtrade lime
- 1 Fairtrade clementine
- 1 cinnamon stick
- 2 star anise
- 6 whole cloves
- 4 fresh bay leaves
- Pinch of grated nutmeg
- 2 bottles of red wine
- 250g Co-operative Fairtrade caster sugar
Method
- Put the caster sugar in a large, heavy-bottomed pan over a medium heat and add the peel of your lemon and lime. Stud pieces of clementine peel with cloves and add.
- Squeeze in the juice of the clementine (being careful to remove any pips).
- Add the cinnamon stick, grated nutmeg, bay leaves, star anise and half a bottle of red wine.
- Allow this mixture to simmer for around 5 minutes, stirring constantly with a wooden spoon.
- Once the sugar has dissolved and you can smell all the aromas of your spice mix, add the rest of the red wine, simmer through and then turn down the heat.
- Leave on the heat for a further 5 minutes to warm the rest of the wine through, then ladle into mugs or Irish coffee glasses to serve.
Tips:
Mulled wine is best served with mince pies, Christmas cake or pudding, stews or any other winter warmers. You can make your mulled wine in advance and reheat when ready to serve.
