Simply Seasonal

It’s good to eat with the seasons. Eating food at the time it’s grown means it’s allowed to flourish naturally. It’s grown locally, which means less travel, so it’s lighter on the environment and, ultimately, your wallet. Plus, with less time to lose nutrients, it’s better for you. Take a look at these seasonal recipes and tuck in.

Put a spring in your step

Lighter Lamb

When you want something full of flavour, but simpler than a roast, try this. It’s a stir fry that ticks all the boxes, with seasonal peppers and spring onions, and it’s quick too – you’ll have it on the table within half an hour.

Finger-lickin’ chicken

If you’re planning a garden gathering, you might like to have your first barbecue of the year. Marinate these chicken drumsticks overnight for the fullest flavour, and if the weather’s not great, cook them in the oven. Great for lunchboxes too.

Seafood spectacular

As the weather grows warmer, our palates change, and a light fish dish can really hit the spot. This quick and easy meal uses seasonal new potatoes and is transformed into something deliciously decadent with a garlic, cream and brandy sauce.

Vegan paella

Full of colour and flavour, this veg paella is a twist on the traditional Spanish seafood dish. Packed with peppers, tomatoes, beans and peas, you can add in any extras you like, such as olives or mushrooms.

Filling frittata

Want something quick and easy? Whip up this frittata, featuring seasonal favourite, asparagus. It’s rich in vitamins, boosts your immune system and may even help ease a hangover! Five spears counts as one of your five a day.

Veggie lasagne

Did you know…? The lasagne that we know and love originated in Naples, way back in the Middle Ages – although the tomatoes weren’t added until the late 1800s. This veggie lasagne is light, tasty and packed full of goodness thanks to the seasonal spinach.

Super salad

Crispy halloumi, warm new potatoes and crunchy radishes are the heroes of this dish. Drizzled with an olive oil and chilli sauce, it’s sure to get the tastebuds fired up.

Marvellous muffins

While rhubarb is high in fibre, vitamins and minerals, that probably won’t be your motivation to make these muffins. The sweetness is perfectly complemented by the tart flavour of the fruit, while the crumble topping adds a delicious crunch.
