Gingerbread Men

Ingredients

  • 350g (12oz) plain flour
  • 5ml (1tsp) bicarbonate of soda
  • 10ml (2tsp) ground ginger
  • 100g (3 1/2oz) The Co-operative butter
  • 175g (6oz) light muscovado sugar
  • 60ml (4tbsp) golden syrup
  • 1 The Co-operative free range egg, beaten
  • Currants to decorate

Method

  1. Preheat oven to 190°C, 375°F, gas mark 5. Lightly grease 2 baking trays.
  2. Place the flour, bicarbonate of soda, egg, and ginger in a bowl. Rub in the butter until the mixture resembles fine breadcrumbs, stir in the sugar and add the syrup, kneading lightly.
  3. Roll out on a lightly floured surface until 5mm (1/4in) thick.
  4. Cut out the gingerbread shapes using a cutter. Place on the baking trays.
  5. Use currants for eyes and buttons. Bake for approximately 10–12 minutes.
  6. Cool on a wire rack. Decorate with smarties and white icing.

This recipe has one or more red traffic lights. It's fine to eat occasionally or as a treat.
