Hot Cross Buns
Ingredients
- 540g strong white bread flour
- 2 x tsp ground cinnamon
- 2 x tsp mixed spice
- 50g butter
- 70g caster sugar
- 4g yeast
- 1 x large egg
- 210ml semi-skimmed milk
- 140g dried mixed fruit
- 2 x tbsp plain flour
- 1 x ziplock bag (or piping bag)
- 25ml golden syrup
Method
1. Sieve the flour into a mixing bowl, adding the cinnamon and mixed spice, mixing together lightly
2. Once the butter is at room temperature, cut it into cubes and add it to the bowl
3. Mix until the ingredients form a fine consistency
4. Add the yeast and caster sugar, then crack the egg into the bowl
5. Warm the semi-skimmed milk using the hob or microwave, then pour this into the bowl
6. Mix until ingredients are combined
7. Add the mixed fruit then knead into the dough for 5 mins
8. Grease a large mixing bowl and place the dough inside
9. Cover with clingfilm and leave to prove for 1 hours 30 mins
10. Once the dough has proved, remove it from the bowl and divide into desired number of buns (e.g.: 12)
11. Line a baking tray with grease-proof paper and place all buns onto it, taking care to space them evenly apart and pressing each one down lightly
12. Leave the buns to prove for a further 60 mins
13. While the buns are proving, combine the flour with around 75ml of water and stir into a paste
14. Once the buns have finishing proving, pour the flour mixture into a piping bag (or ziplock bag)
15. Pipe a cross onto each of the hot cross buns
16. Place the buns into a pre-heated oven for around 20 mins at 180°
17. Remove the hot cross buns from the oven and immediately glaze with golden syrup
