Yummy Mince Pies

Serves: 12

Cooking Time: 30 minutes


  • 411g/11oz Co-operative Luxury Mincemeat
  • 175g/6oz plain flour, sifted
  • 25g/1½oz Fairtrade golden caster sugar
  • 100g/4oz Co-operative unsalted butter, diced
  • Clotted cream or brandy sauce to serve
  • 1 tbsp of cold water


  1. Preheat the oven to 190ºC/Gas mark 5. Sift the flour into a bowl, then rub in the butter. Stir in the sugar and 1 tbsp cold water and gently knead to form a soft dough.
  2. On a lightly floured surface, roll out half of the pastry, cut out 12 circles and
  3. transfer them into a bun tray, these will form the base of the pies. Put 1tbsp of mincemeat into each base.
  4. Roll out the remaining dough and cut out slightly smaller circles. Brush lightly with water and cover the mincemeat bases then seal the edges well. Prick the surface of each pie and cook for 20-25 minutes until golden.
  5. Take the tray out of the oven and allow the pies to cool for a few minutes, then transfer to a wire rack to cool further before serving. Add cream or brandy sauce if desired.
