Berry Burst Sorbet

Ingredients

  • 500g mixed berries (e.g. redcurrants, blackcurrants, raspberries, blueberries, blackberries)
  • 175g caster sugar
  • juice of half a lemon

Method

  1. This sorbet is bursting with berry flavours and looks as good as it tastes. You will need to keep whisking this as it freezes to make sure that it has a smooth texture when frozen.
     
  2. Put the fruit into a saucepan.
     
  3. Add the sugar and lemon juice and heat gently, stirring occasionally, for 5 minutes until the sugar has dissolved.
     
  4. Place the fruit mixture into a blender and whizz until it's a smooth puree. Leave to cool.
     
  5. Pour the mixture into a freeze-proof container and freeze for 2 hours. Scrape the mixture into a blender and blend again until smooth. Repeat this process at least 3 more times, every couple of hours or so (when the mixture is almost frozen).
     
  6. Leave to freeze overnight.
