Berry Burst Sorbet
Serves: 6
Preparation: 10 minutes
Cooking Time: 5 minutes
Ingredients
- 500g mixed berries (e.g. redcurrants, blackcurrants, raspberries, blueberries, blackberries)
- 175g caster sugar
- juice of half a lemon
Method
-
This sorbet is bursting with berry flavours and looks as good as it tastes. You will need to keep whisking this as it freezes to make sure that it has a smooth texture when frozen.
-
Put the fruit into a saucepan.
-
Add the sugar and lemon juice and heat gently, stirring occasionally, for 5 minutes until the sugar has dissolved.
-
Place the fruit mixture into a blender and whizz until it's a smooth puree. Leave to cool.
-
Pour the mixture into a freeze-proof container and freeze for 2 hours. Scrape the mixture into a blender and blend again until smooth. Repeat this process at least 3 more times, every couple of hours or so (when the mixture is almost frozen).
- Leave to freeze overnight.
