Fairtrade Banana Ice Cream

Ingredients

  • 3 limes
  • 2 tbsp The Co-operative Fairtrade dark brown sugar
  • 300ml double cream
  • 300ml low-fat natural yogurt
  • 5 ripe The Co-operative Fairtrade bananas
  • 2 tbsp unsweetened desiccated coconut (optional).

Method

  1. Finely grate the zest from the limes and set aside.
  2. Juice 2 limes and stir juice into sugar until dissolved.
  3. Whip the cream until it holds its shape.
  4. Add in yogurt.
  5. Peel 4 of the bananas and mash until you have a purée.
  6. Fold the zest of 2 of the limes, juice, sugar and banana purée into the cream.
  7. Spoon into a lidded freezable container and freeze for 45 minutes, then stir the mixture, refreeze for 45 minutes, stir again and refreeze.
  8. Continue this process for at least 4 hours.
  9. To serve, top with slices of banana, lime zest and, if using, the coconut (toasted).
