Fairtrade Banana Ice Cream

Cooking Time: Freeze for 4 hours
Ingredients
- 3 limes
- 2 tbsp The Co-operative Fairtrade dark brown sugar
- 300ml double cream
- 300ml low-fat natural yogurt
- 5 ripe The Co-operative Fairtrade bananas
- 2 tbsp unsweetened desiccated coconut (optional).
Method
- Finely grate the zest from the limes and set aside.
- Juice 2 limes and stir juice into sugar until dissolved.
- Whip the cream until it holds its shape.
- Add in yogurt.
- Peel 4 of the bananas and mash until you have a purée.
- Fold the zest of 2 of the limes, juice, sugar and banana purée into the cream.
- Spoon into a lidded freezable container and freeze for 45 minutes, then stir the mixture, refreeze for 45 minutes, stir again and refreeze.
- Continue this process for at least 4 hours.
- To serve, top with slices of banana, lime zest and, if using, the coconut (toasted).
