Raspberry Crush Syllabub

Ingredients

  • 200 ml Co-operative double cream
  • 200 ml Co-operative reduced fat crème fraiche
  • 150ml Sparkling Raspberry crush drink
  • 10 strawberries, finely chopped
  • 40g caster sugar
  • Juice of 1 lemon
  • Juice of 1 orange
  • 2tbsp brandy
  • Grated Co-operative dark Fairtrade chocolate to decorate

Method

  1. In a large mixing bowl add the sugar, lemon, orange and raspberry crush, mix until the sugar has dissolved
  2. Stir in the strawberries, then add the cream and crème fraiche
  3. Whisk all the ingredients together until you have a lightly whipped cream that just about falls off the whisk
  4. Spoon the mixture between your glasses/ bowls and pop into the fridge for about an hour
  5. Just before serving top with some grated chocolate and maybe a few fresh berries
