Raspberry Crush Syllabub

Cooking Time: 60 minutes
Ingredients
- 200 ml Co-operative double cream
- 200 ml Co-operative reduced fat crème fraiche
- 150ml Sparkling Raspberry crush drink
- 10 strawberries, finely chopped
- 40g caster sugar
- Juice of 1 lemon
- Juice of 1 orange
- 2tbsp brandy
- Grated Co-operative dark Fairtrade chocolate to decorate
Method
- In a large mixing bowl add the sugar, lemon, orange and raspberry crush, mix until the sugar has dissolved
- Stir in the strawberries, then add the cream and crème fraiche
- Whisk all the ingredients together until you have a lightly whipped cream that just about falls off the whisk
- Spoon the mixture between your glasses/ bowls and pop into the fridge for about an hour
- Just before serving top with some grated chocolate and maybe a few fresh berries
