Bacon and Avocado Salad

Ingredients
- 400g new potatoes
- 8 back bacon rashers
- 4 ripe avocados, halved, peeled and sliced
- 1/2 clove garlic, peeled
- 1/2 tsp mustard
- 1/2 tsp balsamic vinegar
- 1/2 tbsp red wine vinegar
- 3tbsp olive oil
Method
- Preheat the grill. Cook the potatoes in boiling water until just cooked, drain. Meanwhile, grill the bacon until crispy.
- Divide the potatoes and avocado between 4 plates. Cut the bacon into pieces and scatter over.
- Mash the garlic with a little salt in a pestle and mortar, then mix in the mustard. Add the vinegars and stir in the oil. Drizzle the dressing over and serve.
