Bacon and Avocado Salad

Ingredients

  • 400g new potatoes
  • 8 back bacon rashers
  • 4 ripe avocados, halved, peeled and sliced
  • 1/2 clove garlic, peeled
  • 1/2 tsp mustard
  • 1/2 tsp balsamic vinegar
  • 1/2 tbsp red wine vinegar
  • 3tbsp olive oil

Method

  1. Preheat the grill. Cook the potatoes in boiling water until just cooked, drain. Meanwhile, grill the bacon until crispy.
  2. Divide the potatoes and avocado between 4 plates. Cut the bacon into pieces and scatter over.
  3. Mash the garlic with a little salt in a pestle and mortar, then mix in the mustard. Add the vinegars and stir in the oil. Drizzle the dressing over and serve.
