Chicken and Mushroom Pasta

Ingredients
- 1tbsp olive oil
- 40g butter
- 1 onion, peeled and finely chopped
- 250g chestnut mushrooms, sliced
- 1 clove garlic, peeled and crushed
- 50g plain flour
- 500ml semi-skimmed milk
- 4 cooked chicken thighs (skin removed), cut into thin strips
- 300g The Co-operative spirali pasta
- 1/2 broccoli head, cut into small florets
Method
- Heat the oil and butter in a pan, add the onion and cook until soft. Add the mushrooms and garlic and cook for a few minutes. Stir in the flour and cook for a couple minutes more.
- Gradually, add the milk, stirring until smooth. Add the chicken and simmer for 5 minutes. Season with black pepper.
- Meanwhile, cook the pasta following pack instructions. Add the broccoli just before the end of cooking time. Drain and add to the sauce, stir and serve.
