Chicken and Mushroom Pasta

Ingredients

  • 1tbsp olive oil
  • 40g butter
  • 1 onion, peeled and finely chopped
  • 250g chestnut mushrooms, sliced
  • 1 clove garlic, peeled and crushed
  • 50g plain flour
  • 500ml semi-skimmed milk
  • 4 cooked chicken thighs (skin removed), cut into thin strips
  • 300g The Co-operative spirali pasta
  • 1/2 broccoli head, cut into small florets

Method

  1. Heat the oil and butter in a pan, add the onion and cook until soft. Add the mushrooms and garlic and cook for a few minutes. Stir in the flour and cook for a couple minutes more.
  2. Gradually, add the milk, stirring until smooth. Add the chicken and simmer for 5 minutes. Season with black pepper.
  3. Meanwhile, cook the pasta following pack instructions. Add the broccoli just before the end of cooking time. Drain and add to the sauce, stir and serve.
