Creamy Salmon with Prawns

Ingredients

  • 100g new potatoes
  • 2 The Co-operative Scottish skin on salmon fillets
  • 1 clove garlic, peeled and crushed
  • 2tbsp brandy or white wine
  • 100ml double cream
  • 140g raw or cooked prawns
  • 100g green beans, trimmed

Method

  1. Steam the new potatoes. While they are cooking, pan-fry the salmon, skin side upwards, until golden. Turn the fillets, add the garlic and brandy and cook for a few more minutes.
  2. Add the cream and bubble for a few minutes, until the fish is cooked through.
  3. Add the prawns. (If they are raw, cook them until they are pink; if cooked, they just need to be heated through.) Season with freshly ground black pepper.
  4. Steam the green beans and serve with the salmon and the new potatoes.
