Fillets of White Fish with Roasted Leeks

Ingredients

  • 2 small leeks, sliced into 3cm pieces
  • 2 small baking potatoes, sliced into 1 cm rounds
  • 2tbsp olive oil
  • 3 garlic cloves, thinly sliced
  • ½ lemon, sliced into rounds
  • 1tsp fresh thyme, chopped
  • 2 rashers, streaky smoked bacon, sliced in half
  • 2 fillet of fresh white fish with the skin on (such as cod, haddock)
  • Chopped fresh parsley

Method

  1. Pre-heat your oven to 200 degrees C / gas 6.
  2. Place the slices of leeks and potato into a large bowl drizzle over the olive oil and with your hands toss the potato and leeks until coated in the olive oil, season to taste and place onto a baking tray ideally into a single layer (a little overlapping is fine).
  3. Bake for 20-25 minutes, turning half way until the leeks and potatoes are starting to turn brown and crispy, then remove from the oven.
  4. Next pop the slices of lemon onto the tray scatter over the chopped fresh thyme. Season the fish fillets, place them onto the tray and finally add the rashers of bacon.
  5. Pop back into the oven for 10 minutes and then serve with a little chopped fresh parsley and lemon.
