Finger Lickin' Drumsticks

Ingredients

  • For the Marinade2tbsp The Co-operative Irresistible basil infused oil
  • 2tbsp natural yogurt or The Co-operative Healthier Choice Greek style natural yogurt
  • 1tbsp runny honey
  • 1tbsp lemon juice
  • 1 clove garlic, peeled and crushedFor the Chicken8 chicken drumsticks (skin removed)
  • a handful of fresh basil leaves

Method

  1. Marinating the chicken overnight ensures the meat has lots of flavour. Pop in the oven first thing the next day.
  2. Mix together all of the marinade ingredients. Cut a few stilts in the chicken drumsticks and add to the bowl of marinade.
  3. Use your hands to rub the flavours into the meat, cover and refrigerate for at least 20 minutes.
  4. Preheat the oven to 180°C/fan 160°C/Gas 4.
  5. Put the chicken into a roasting dish and cook, turning occasionally, for 45-50 minutes or until the chicken is cooked through.
  6. Leave to cool and then pack in a tub, scatter over fresh basil leaves, seal and keep chilled until you are ready to eat.
