Finger Lickin' Drumsticks

Ingredients
- For the Marinade2tbsp The Co-operative Irresistible basil infused oil
- 2tbsp natural yogurt or The Co-operative Healthier Choice Greek style natural yogurt
- 1tbsp runny honey
- 1tbsp lemon juice
- 1 clove garlic, peeled and crushedFor the Chicken8 chicken drumsticks (skin removed)
- a handful of fresh basil leaves
Method
- Marinating the chicken overnight ensures the meat has lots of flavour. Pop in the oven first thing the next day.
- Mix together all of the marinade ingredients. Cut a few stilts in the chicken drumsticks and add to the bowl of marinade.
- Use your hands to rub the flavours into the meat, cover and refrigerate for at least 20 minutes.
- Preheat the oven to 180°C/fan 160°C/Gas 4.
- Put the chicken into a roasting dish and cook, turning occasionally, for 45-50 minutes or until the chicken is cooked through.
- Leave to cool and then pack in a tub, scatter over fresh basil leaves, seal and keep chilled until you are ready to eat.
