Manchego Crusted Pork Cutlets

A pale yellow, semi-soft sheeps' milk cheese. Aged for 3-6 months, to give a mild fruity nutty taste. Available in different varieties, depending on the length of maturation. Works well with cured meats.
Ingredients
- 4 pork cutlets
- 130g breadcrumbs, toasted
- 120g Manchego cheese, grated finely handful fresh parsley, finely chopped
- zest of 1 lemon
- 100g plain flour
- 1 egg
- 2 tbsp of milk
- 125ml olive oil
Method
- Pre-heat the oven to 180C/160C fan/gas 4
- Mix the bread crumbs, Manchego, parsley, and lemon zest in a bowl with extra salt and pepper.
- Beat the egg and milk together in a bowl. Place the flour in a dish or large plate, and then coat the pork with the flour, dip in the egg and finally coat in the breadcrumb mix.
- Heat the oil in a pan on a medium heat. Brown the pork for 3-4 minutes on each side, until golden.
- Place the pork in a roasting dish, and cook for 15 minutes. Leave to rest for a few minutes before plating up.
- Serve with a potato side and dressed salad.
