Olive and Herb Cod

Serves: 4
Preparation: 15 minutes
Cooking Time: 30 minutes


  • 800g new potatoes
  • 2 cloves garlic, peeled and crushed
  • 8tsp pesto
  • 3 spring onions, finely chopped
  • 2tsp olive oil
  • 4 cod fillets or white fish of your choice
  • 125g olives, finely chopped
  • Zest of 1 lemonTo serve, steamed green beans


  1. Preheat the oven to 190oC fan 170oC Gas 5. Halve the potatoes (same-size pieces are best so that they cook evenly) and put into a roasting dish. Add half the garlic, pesto and onions plus the oil, mix and roast for 20 minutes.
  2. Spread 1 tsp of pesto on each cod fillet. Put the olives, lemon zest, remaining garlic and onions into a bowl. Mix together and spoon over the cod, pressing down lightly.
  3. Take the potatoes out of the oven, give them a stir and place the fish on top and put back in the oven for 10 minutes or until the fish is just cooked. Serve with green beans.
