Pan Fried Venison Burgers, with Thyme Sauteed Pears

British venison specialty burgers. Made from naturally reared, grass fed deer. Tender and lean meat used, marbled with fat. Herbs and seasonings added to bring out the flavour of the venison.



Ingredients

  • 4 venison burgers
  • 2 ripe conference pears, cut into wedges
  • large knob of butter
  • 6 sprigs of thyme,
  • leaves removed
  • 4 ciabatta rolls
  • olive oil

Method

  1. Heat a glug of olive oil in a frying pan, and when hot add the burgers. Cook for around 5-6 minutes each side, or until cooked through. Set aside and let them rest.
  2. In the same pan, add the butter. When it starts to bubble slightly add the pears.
  3. Sautee the pears for about 15 minutes, making sure you turn every couple of minutes. In the last five minutes, add the thyme leaves so they release their perfume into the pear.
  4. The pears are ready when slightly tender and golden brown in color.
  5. Serve the burgers inside toasted ciabatta rolls with the pear and some additional salad if required.
