Poached, Spiced Pears with Chocolate Sauce

long and conical in shape, with yellowish skin and sweet juicy flesh
Ingredients
- 750g golden caster sugar
- 4 pears, peeled
- 1 cinnamon stick
- 5 cloves 1 star anise
- thumb sized piece of ginger, peeled and chopped
- For the sauce:
- 200g dark chocolate
- 150ml double cream
- 150ml whole milk
Method
- In a large pan (which can house all of the pears), tip in the sugar, cinnamon, cloves, star anise and ginger.
- Half fill the pan with water and bring to the boil. Once boiled, simmer for a further 10 minutes before dropping in the pears.
- Poach the pears for 30 minutes or until soft and tender. Set aside to cool.
For the sauce:
- Place the cream and milk in a pan, and bring to the boil.
- Once boiled, take off the heat and add the chocolate in small pieces.
- Stir until all the chocolate is melted, and the mixture smooth.
- Drain the pears from the syrup and dip them in the chocolate sauce, until covered.
- Leave to cool so the chocolate hardens slightly, and serve.
