Quick Cook Orange and Turkey Stir-fry

Ingredients

  • Spray oil
  • 1 large red onion (approx 210g); cut into thin wedges
  • 500g The Co-operative Healthy Living British turkey; cut into strips
  • 2 carrots (approx 175g); cut on the diagonal
  • 250g broccoli florets
  • 2 The Co-operative Fairtrade large oranges; 1 grated and juiced, 1 peeled and segmented
  • 1 tbsp reduced-salt dark soy sauce
  • 2 tsp The Co-operative ground ginger
  • 1 tsp cornflour
  • Black pepper

Method

  1. Heat a wok or large frying pan. Add the spray oil and stir-fry the onion for 2-3 mins over a medium heat until softened.
  2. Add the turkey and stir-fry for 3 minutes until it starts to brown. Add the carrots and broccoli and stir fry for a further 3 minutes.
  3. Mix the orange rind and juice with the soy sauce, ginger and cornflour. Pour over the stir-fry and cook for 1-2 minutes until the sauce is thickened and glossy. Reduce the heat.
  4. Scatter the orange segments over the stir-fry, season with black pepper and serve.
