Runner Bean & Courgette Spaghetti with King Prawn

Ingredients
- 4 runner beans, cut in half
- 1 medium courgette
- 1tbsp extra virgin olive oil
- juice of 1⁄2 lemon
- 1 garlic clove, crushed
- 1⁄2 red chilli, de-seeded and finely chopped
- 10 king prawns
- 5 mint leaves, chopped
- 5 basil leaves, chopped
Method
- With a vegetable peeler slice the courgette lengthways into thin strips.
- Then with a knife cut into thin long strips, much like spaghetti.
- Cook the runner beans in boiling water for 3-4 minutes and drain into a colander but do not refresh under cold water.
- Pop the courgette strips into the boiling water for 1 minute then place into the colander.
- In a small bowl mix the extra virgin olive oil, lemon juice, garlic and chilli.
- Pop the beans and courgettes into a mixing bowl and toss with the dressing.
- Finally add the prawns, mint, basil and season to taste then serve.
