Runner Bean & Courgette Spaghetti with King Prawn

Ingredients

  • 4 runner beans, cut in half
  • 1 medium courgette
  • 1tbsp extra virgin olive oil
  • juice of 1⁄2 lemon
  • 1 garlic clove, crushed
  • 1⁄2 red chilli, de-seeded and finely chopped
  • 10 king prawns
  • 5 mint leaves, chopped
  • 5 basil leaves, chopped

Method

  1. With a vegetable peeler slice the courgette lengthways into thin strips.
  2. Then with a knife cut into thin long strips, much like spaghetti.
  3. Cook the runner beans in boiling water for 3-4 minutes and drain into a colander but do not refresh under cold water.
  4. Pop the courgette strips into the boiling water for 1 minute then place into the colander.
  5. In a small bowl mix the extra virgin olive oil, lemon juice, garlic and chilli.
  6. Pop the beans and courgettes into a mixing bowl and toss with the dressing.
  7. Finally add the prawns, mint, basil and season to taste then serve.
