Spicy Stuffed Chicken in Bacon

Ingredients

  • 1 lime
  • 1 clove garlic, crushed
  • 100g The Co-operative Healthier Choice reduced fat soft cheese
  • 1/2-1tsp chilli powder, to taste
  • 4 skinless chicken breasts
  • 8 rashers smoked streaky bacon
  • 1tsp olive oil
  • To serve
  • mash, rice or couscous and green beans

Method

  1. Preheat oven to 200C/fan180/Gas6.
  2. Grate the zest of the lime and mix with the garlic and cheese. Add 1/2-1tsp chilli depending on how spicy you like your food.
  3. Cut a slit in the side of each chicken breast to make a pocket. Stuff with 1/4 of the cheese mix. Wrap 2 bacon rashers around the chicken to hold it together. Repeat with the rest of the chicken.
  4. Grease a baking tray with oil and then place the chicken on it with the ends of the bacon tucked underneath. Cut the lime in half and place in the baking tray with the chicken. Bake for 25-30 minutes or until the bacon is golden brown and the chicken is cooked through.
  5. Squeeze the lime juice over the chicken. Serve the mash with green beans, or rice, or couscous if you prefer.
