Hannah’s sunshine summer bowl

Ingredients
- 1 packet of Mexican-style ready cooked rice
- 1 tin of tuna
- Sesame oil
- Soy sauce
- 1 tin of kidney beans
- 1 tin of sweetcorn
- A handful of cherry tomatoes, halved
- ½ cucumber, sliced
- 1 avocado, sliced
- Feta cheese, crumbled
- Sesame seeds
- Fresh coriander
Method
1. Cook the rice according to the packet instructions, then lay it in the bottom of the bowl.
2. Mix the tuna with a good glug of sesame oil and soy sauce, then add this to the bowl too.
3. Drain the kidney beans and sweetcorn, and add to the bowl.
4. Arrange the sliced tomatoes, cucumber and avocado on the top.
5. Sprinkle over the crumbled feta and some sesame seeds.
6. Add coriander for garnish.
