Super Sticky Roast Belly of Pork

100% British pork. Taken from the underside of the loin when the ribs have been removed. Boneless cut of meat. Very fatty, so is full of flavour, and very juicy. Best cooked slow over a long period of time.



Ingredients

  • 700-750g pork belly slices
  • 2 tbsp olive oil
  • 1 small onion, finely chopped
  • 4 tbsp red wine
  • 4 tbsp soy sauce
  • 1 tbsp tomato puree
  • 1 tsp ground ginger
  • 2 garlic cloves, crushed
  • 1 tbsp light brown sugar

Method

  1. Pre heat the oven to 200C/400F/gas 6.
  2. Pat the strips of pork belly dry with kitchen roll. Coat the pork in olive oil and season with plenty of black pepper, and a very small amount of salt.
  3. Put the pork belly in a roasting tin along with the onion. Mix everything together with another glug of oil.
  4. Let them cook for 30 minutes.
  5. To make the sticky sauce, whisk all the rest of the ingredients together. After the pork has been in the oven for 30 minutes, pour in the sauce, and mix together to coat. Cook for a further 30 minutes, basting the pork at least twice.
  6. Serve with potatoes or rice, and vegetables.
