Sweetheart Cabbage with Bacon and Sage

A pointed, bright green cabbage, with a slightly sweeter taste and softer texture than other green cabbage varieties.



Ingredients

  • 1 cabbage, thinly sliced
  • 5 rashers of smoked bacon, chopped into small pieces
  • large handful of fresh sage leaves, finely chopped
  • clove of garlic, peeled and chopped
  • 2 tbsp olive oil
  • 4 tbsp Worcester sauce
  • 3 tbsp pine nuts

Method

  1. Heat the olive oil in a frying pan over a medium heat. Add the bacon, and fry for around 3 minutes until it starts to crisp and any fat has rendered. 
  2. Add the cabbage to the same pan, and saute for 5 minutes, before adding the garlic and sage. Mix thoroughly, and turn the heat down to avoid the garlic burning.
  3. Add the Worcester sauce, and let the cabbage continue to sweat with all the flavours.
  4. Meanwhile, place a pan on a medium heat without oil. Add the pine nuts, and toast until you see them turn colour. It will take about 60 seconds.
  5. Fold the pine nuts through the cabbage
  6. Take off the heat and serve.
