Sweetheart Cabbage with Bacon and Sage

A pointed, bright green cabbage, with a slightly sweeter taste and softer texture than other green cabbage varieties.
Ingredients
- 1 cabbage, thinly sliced
- 5 rashers of smoked bacon, chopped into small pieces
- large handful of fresh sage leaves, finely chopped
- clove of garlic, peeled and chopped
- 2 tbsp olive oil
- 4 tbsp Worcester sauce
- 3 tbsp pine nuts
Method
- Heat the olive oil in a frying pan over a medium heat. Add the bacon, and fry for around 3 minutes until it starts to crisp and any fat has rendered.
- Add the cabbage to the same pan, and saute for 5 minutes, before adding the garlic and sage. Mix thoroughly, and turn the heat down to avoid the garlic burning.
- Add the Worcester sauce, and let the cabbage continue to sweat with all the flavours.
- Meanwhile, place a pan on a medium heat without oil. Add the pine nuts, and toast until you see them turn colour. It will take about 60 seconds.
- Fold the pine nuts through the cabbage
- Take off the heat and serve.
