Courgettes with Basil

Ingredients
- 4 medium courgettes
- 2tbsp olive oil
- 2tbsp lemon juice
- large handful fresh basil leaves
Method
- This is a really lovely summery side dish. Cook the courgettes when you have time and then leave in the oil and lemon juice until you need them - they are equally as good when chilled as when warm.
- Trim the courgettes and slice diagonally.
- Heat a little of the oil in a griddle or frying pan and fry some of the courgettes for about 3 minutes on each side until cooked and starting to turn golden.
- Put into a bowl and repeat with the remaining courgettes and oil.
- Add the lemon juice and basil and season with freshly ground black pepper.
NB: Cooking time depends on how big your pan is.
