Courgettes with Basil

Ingredients

  • 4 medium courgettes
  • 2tbsp olive oil
  • 2tbsp lemon juice
  • large handful fresh basil leaves

Method

  1. This is a really lovely summery side dish. Cook the courgettes when you have time and then leave in the oil and lemon juice until you need them - they are equally as good when chilled as when warm.
  2. Trim the courgettes and slice diagonally.
  3. Heat a little of the oil in a griddle or frying pan and fry some of the courgettes for about 3 minutes on each side until cooked and starting to turn golden.
  4. Put into a bowl and repeat with the remaining courgettes and oil.
  5. Add the lemon juice and basil and season with freshly ground black pepper.

NB: Cooking time depends on how big your pan is.
