Spiced Roasted Pumpkin Seeds

Ingredients

  • 200g pumpkin seeds
  • 2tsp olive oil
  • 1/2. tsp chilli flakes
  • 1 tsp cumin
  • 1 garlic clove, very finely chopped
  • 1/2. tsp cayenne pepper
  • Juice of 1 lime

Method

  1. Removing the pith from the pumpkin seeds may be a little time consuming but once you taste what you are about to make it will be worth your while. I even use these simply scattered over salads.
  2. Wash and pat dry the pumpkin seeds.
  3. Once dry place onto an oven tray.
  4. In a small bowl mix the rest of the ingredients, season to taste then drizzle over the seeds and mix well.
  5. Bake in a pre-heated oven at 180C / gas mark 4 for about 20 minutes occasionally stirring until golden brown.
  6. Leave to cool a little squeeze over the lime and serve in a nice little bowl.

Tip: Use the seeds from the pumpkin you have used to make our Lightly Spiced Cottage Pie, or you could use The Co-operative Wholefoods Pumpkin Seeds if you wish.
