Spicy Sweet Eggy Bread

Ingredients
- 5 The Co-operative free range eggs
- 5 tbsp semi skimmed milk
- 1 capful (1/2 tsp) vanilla extract
- 8 thin slices bread e.g. wholemeal, granary or white
- 15g butter
- 1 tsp vegetable oil
- pinch of spice e.g. cinnamon or mixed spice
- small sprinkling of sugar
Method
- Crack the eggs into a bowl. Add the milk and vanilla and whisk together.
- Dip the bread into the egg mixture.
- Heat half of the butter with the oil in a frying pan, add 4 slices of bread and cook for 2 minutes on each side. repeat with the rest of butter and bread.
- Sprinkle with the spice and sugar, cut into quarters and serve. Lovely served with bananas or any fresh fruit.
