Tuna and Pepper Frittata

Ingredients
- 1 tbsp olive oil
- 1 red onion, peeled and finely chopped
- 1 red pepper, deseeded and finely sliced
- 185g tin tuna in oil, drained
- 6 free range eggs
- Handful of finely chopped fresh herbs (e.g. parsley, chives, coriander)
Method
- Preheat the grill to a medium heat. In a large frying pan, heat the oil, add the onion and pepper, and cook gently for 5 minutes or until soft.
- Add the tuna.
- Crack the eggs into a bowl and whisk with a fork.
- Add the herbs.
- Turn up the heat slightly, add the eggs to the pan, stir a few times, then leave for 3 minutes until the bottom is cooked.
- Put the pan under the grill for 2-3 minutes until the egg is cooked all the way through and is golden on top.
