Spicy Tomato and Pepper Soup

Tangy tomato and the delightful infusion of chilli cut beautifully through rustic red pepper to make this a deliciously warming soup.


  • 1 x large onion
  • 2 x garlic cloves
  • 1 x red pepper
  • 15ml olive oil
  • 1 x tbsp oregano
  • ½ tsp chilli powder
  • 1 x tsp paprika
  • 1 x tbsp tomato purée
  • 1 x vegetable stock cube
  • 1 x handful fresh basil


1. Peel and finely chop the onion and garlic, combining them once done

2. De-seed and roughly chop the red pepper

3. Pour the olive oil into a saucepan and place on a medium heat on the hob

4. Once the oil has heated, add the onion, garlic and pepper to the pan, along with the oregano, chopped tomatoes, tomato puree, paprika and crumbled stock cube

5. Stir well until ingredients are combined and finely broken down

6. Top the saucepan up with boiling water

7. Simmer on a low heat for 15 mins

8. Once soup has thickened, remove pan from heat

9. Empty pan into blender, adding the basil leaves

10. Serve and enjoy!
