Bramley Apple Tray Bake

Light golden sponge cake, filled with sharp bramley apples. The perfect combination of sweet and sour, and easy to create.



Ingredients

  • 450g Bramley apples, cored and thinly sliced
  • 225g butter (plus extra for greasing)
  • 250g golden caster sugar (plus extra for sprinkling)
  • 4 eggs 2 tsp of cinnamon
  • 2 tsp Dr Oetker vanilla extract
  • 350g Co-operative self raising flour
  • 2 tsp baking powder

Method

  1. Pre heat the oven to 180C/160C fan/gas 4. Butter and line a rectangular baking tin, (30cm by 20cm if possible).
  2. In a large mixing bowl, whisk the butter, sugar, eggs, vanilla extract, flour and baking powder until the mix is smooth.
  3. Spread half of the mixture into the tin, and lay half the apple slices on top. Repeat the layering process for the last of the ingredients, ensuring a layer of cake mix is on top. Sprinkle the whole thing with sugar and the cinnamon.
  4. Bake in the oven for 50 minutes, until the cake is golden and springy.
  5. Allow to cool, and cut into squares.
