Classic Chocolate Fondant

The ultimate gooey centered, chocolate sponge. Light, fluffy chocolate sponge which has a molten chocolate centre.



Ingredients

  • 85g Co-operative Fairtrade caster sugar
  • 150g butter
  • 150g dark chocolate
  • 3 egg yolks, beaten
  • 2 whole eggs, beaten
  • 1 tbsp Co-operative plain flour

Method

  1. Place the sugar, butter, and chocolate into a heatproof bowl over a pan of simmering water. Stir until the chocolate and butter have melted. When smooth, remove from the heat, and whisk until combined.
  2. Add the egg yolks and whole eggs, and beat into the chocolate mixture.
  3. Fold in the flour gently.
  4. Pour into the ramekins, and chill in the fridge for half an hour. Preheat the oven to 180C/350F/gas 4, and grease 4 deep ramekins.
  5. After chilling, place in the oven for 8 minutes. Allow to cool and turn out onto serving plates. If you don't want to risk the fondant cracking, serve in the ramekins with a dusting of icing sugar.
  6. The centre should be runny, and the outside a light, fluffy sponge.
