Classic Chocolate Fondant

The ultimate gooey centered, chocolate sponge. Light, fluffy chocolate sponge which has a molten chocolate centre.
Ingredients
- 85g Co-operative Fairtrade caster sugar
- 150g butter
- 150g dark chocolate
- 3 egg yolks, beaten
- 2 whole eggs, beaten
- 1 tbsp Co-operative plain flour
Method
- Place the sugar, butter, and chocolate into a heatproof bowl over a pan of simmering water. Stir until the chocolate and butter have melted. When smooth, remove from the heat, and whisk until combined.
- Add the egg yolks and whole eggs, and beat into the chocolate mixture.
- Fold in the flour gently.
- Pour into the ramekins, and chill in the fridge for half an hour. Preheat the oven to 180C/350F/gas 4, and grease 4 deep ramekins.
- After chilling, place in the oven for 8 minutes. Allow to cool and turn out onto serving plates. If you don't want to risk the fondant cracking, serve in the ramekins with a dusting of icing sugar.
- The centre should be runny, and the outside a light, fluffy sponge.
