Flourless Chocolate Cake

A rich, moist decadent chocolate cake. Intense flavour, yet not overly sweet.



Ingredients

  • 120g dark chocolate
  • 120g butter (plus extra for greasing)
  • 150g Co-operative Fairtrade caster sugar
  • 50g cocoa powder
  • 3 eggs, beaten
  • 1 tsp Dr Oetker vanilla extract

Method

  1. Pre heat the oven to 170C/150C fan/gas 3. Grease a round cake tin with butter, and dust with some of the cocoa powder so it sticks to the butter.
  2. Over a pan of simmering water, melt the chocolate and butter together. When smooth, take off the heat and stir in the sugar, cocoa powder, eggs and vanilla.
  3. Pour the mix into the cake tin. Bake in the oven for 30 minutes, until a crust forms.
  4. Set aside to cool for 10 minutes, this will allow the cake to firm up.
  5. After resting, tip onto a wire rack and cool for a further 30 minutes.
  6. Serve with fresh cream.
