Co-operative Breaded Chicken Goujons

Ingredients
- 1 pack of Co-operative breaded goujons
- 2 tortilla wraps
- 6 iceberg lettuce leaves, shredded
- 1 avocado, peeled, de stoned, and sliced
- for the salsa:
- 5 large ripe tomatoes, diced
- 1 spring onion, chopped finely
- 2 tsp fresh parsley, finely chopped
- juice of ½ lemon
- 1 tsp olive oil
- salt and pepper
- For the coriander yoghurt:
- 5 tbsp natural yoghurt
- ½ clove garlic, peeled and finely chopped
- small handful of coriander, finely chopped
Method
- Cook the goujons according to the packet instructions.
- Whilst the chicken cooks, prepare the sauces. For the salsa, throw everything in a bowl and stir. Taste, and see if you need to add more of anything.
- To make the coriander yoghurt, mix everything together in a bowl and add a pinch of salt. Set both sauces aside until needed.
- When the Goujons have finished cooking, layer the fillings onto each tortilla wrap, starting with the sauces and lettuce.
- Wrap the tortilla up, to encase all of the fillings securely.
- Heat a griddle pan, and when hot, place both wraps into it. Toast on each side, for around a minute, until the tortilla crisps and has blackened char marks.
