Fish Parcels with Roasted Vegetables

Ingredients

  • 800g new potatoes, peeled or scrubbed
  • 2 yellow peppers
  • 4 medium or 3 large courgettes
  • 4 whole cloves garlic
  • 2 tbsp olive oil
  • Rosemary or other herbs (optional)
  • 4 responsibly sourced fish fillets eg haddock or anything else in store
  • 4 small sprigs fresh herbs
  • 1⁄2 lemon, sliced into 4
  • 4 tbsp white wine

Method

  1. Preheat the oven to 190oC/fan 170oC/Gas 5.
  2. Cut the potatoes, peppers and courgettes into small pieces. Put into a roasting dish with the garlic, oil and rosemary, if using, and roast for 35 minutes. Mix everything around in the pan and then roast again for another 10 minutes or until cooked.
  3. Meanwhile, cut some greaseproof and baking paper into 4 large squares, big enough to wrap around your fish fillets. Rest a piece of fish in the middle of each one, season with freshly ground black pepper, top with a sprig of fresh herbs, a lemon slice and 1 tbsp of wine. Bring the paper up around the fish and fold the paper to join it together to seal. Put the parcels on a baking tray and cook for 10 minutes (open one parcel to check the fish is cooked).
  4. Serve half of the veg with the fish. Leave the other half to cool and then store, covered, in the fridge overnight.
