Grilled Salmon

Cooking Time: 10 minutes
Ingredients
- 4 salmon fillets
- 1 lemon or lime
- 2tbsp olive oil
- Serve with salad and fresh crusty bread or green beans
Method
- In a large bowl mix together the zest and juice of 1 lime or lemon and 2 tbsp olive oil.
- Add 4 salmon fillets and move around in the bowl so that the fish is covered.
- Leave to marinate for an hour.
- Turn the grill to a high heat, place the fish on a baking tray and put under the grill for 5-7 minutes, depending on how thick the fish is, or until the skin is crisp and the flesh just cooked.
- Serve with salad and fresh crusty bread or green beans.
