Herby Turkey Meatballs, with tomato chilli sauce
Serves: 4
Preparation: 15 minutes
Cooking Time: 40 minutes
British turkey cuts, minced. Selected cuts of ground turkey. Low in fat, and therefore can be a healthy alternative to beef or pork. Carries flavours and seasonings very well.
Ingredients
- For the meatballs:
- 450g minced turkey
- small handful of parsley, finely chopped
- 3 sprigs of thyme, leaves removed
- 3 garlic cloves, peeled and finely chopped
- handful of breadcrumbs
- 1 tbsp dried mixed herbs
- 2 tbsp tomato ketchup
- For the sauce:
- olive oil
- 1 white onion, chopped finely
- 2 cloves of garlic, peeled and chopped
- salt and pepper (to taste)
- 1 red chilli, deseeded and chopped
- 1 tbsp dried mixed herbs
- 1 tins of chopped tomatoes
- 1 tsp sugar
- half a glass red wine
Method
- Firstly, tip the turkey mince into a bowl with all the other ingredients for the meatballs. Mix everything together well with your hands.
- Roll the flavoured mince into an even number of balls. Put on a plate, cover with cling film and leave in the fridge whilst you prepare the sauce.
- In a large saucepan, heat a glug of olive oil. Throw in the onions and garlic and let them sweat until soft.
- Add the rest of the ingredients and let the sauce simmer on a low heat.
- In a separate frying pan heat a dash of olive oil. Take the meatballs out of the fridge, and fry them until golden brown.
- Remove them from the frying pan and immediately transfer them to the pan with the tomato sauce. Stir them through the sauce, and let everything simmer together for 20 minutes.
- Serve with pasta of your choice, and crusty bread.
