Lamb and Apricot Tagine

Ingredients
- 1 onion, diced
- 1 clove garlic, crushed
- 5ml (1tsp) sunflower oil
- 2 x 160g packs (approx.) The Co-operative lamb steak
- 15ml (1tbsp) plain flour
- 10ml (2tsp) ground coriander
- 2.5-5ml (0.5-1tsp) ground chilli powder
- 1 lamb stock cube
- 150g (5.5oz) frozen mixed vegetables
- 6 dried apricots, halved
Method
- Place the onion, garlic and oil in a pan. Cook until softened. Cube the lamb (removing any fat) and toss in the flour. Add to the pan with the coriander and chilli. Cook until browned on all sides.
- Crumble the stock cube into 300ml (0.5pt) water. Add to the pan and simmer for 20 minutes. Add the vegetables and apricots, and continue to cook for 10-15 minutes.
