Fairtrade Choc Chip Banana Bread

  • 80g butter
  • 150g caster sugar
  • 200g plain flour
  • ½ tsp bicarbonate of soda
  • 2 x large eggs
  • 60ml semi-skimmed milk
  • 3 x ripe Fairtrade bananas
  • 50g Fairtrade dark chocolate
  • 75g icing sugar
  • 50ml water


1. Ensure the butter is at room temperature and cut into cubes

2. Add the butter and caster sugar to the food mixer and combine

3. Sieve in the flour and bicarbonate of soda

4. Crack the eggs into the bowl, as well as pouring in the milk

5. Mix well until smooth and consistent

6. Peel and mash the bananas until you have a soft mixture

7. Roughly chop the chocolate into small pieces

8. Add the chocolate and banana to the mixing bowl and combine for 2 mins

9. Line or grease a loaf tin and fill with the mixture

10. Bake in a pre-heated oven for 45 mins at 180°

11. Once you can see the loaf has risen, remove from the oven and leave to stand for 15 mins

12. While the loaf is cooling, mix the icing sugar and water together to form a glaze

13. Drizzle the icing onto the loaf once cool, and leave for a further 10 mins in the fridge

14. Slice into bite-sized chunks, serve and enjoy!
